I tried 2 rolls matcha&yuzu and coffee roll cake, I liked the one with coffee, matcha is fir matcha lovers. I thought the sponges were a bit thin and the matcha cream had too much gelatin. The rest was ok. These are some rolls from luxury dessert category. I have a small bakery and want to do something special, these rolls are just that

I really enjoyed trying the Pavlova recipe from KICA Academy — it’s incredibly detailed and clearly designed with great expertise.
At the same time, it feels more suited for professional bakers, as it involves many steps and specialized ingredients that aren’t always easy to find at home.
Still, a very inspiring experience and a great way to learn advanced techniques!
